My husband first made this cake with cookies and ice cream for a party a few years ago ... and it probably didn't last long!
In fact, this Oreo ice cream cake is already one of our desserts for cooking parties, because everyone liked it so much!
There's something about the combination of creamy ice cream sandwiches and shredded Oreo frost that's just heavenly! Seriously, I could just eat this icing straight from the bowl (and I can have it while I'm making the cake ... don't judge me!)

I knew that everyone would enjoy this recipe because it is just so easy and is absolutely rich, chocolate and decadent! Plus, if I can do it, someone I can!
All you need are 3 simple store-bought ingredients and a few hours to leave the cake!
Honestly, I think this homemade ice cream cake tastes better than the fancy (and expensive) ice cream cakes you would buy in the store!

What you need to make an easy ice cream cake
All you need are 3 simple store-bought ingredients!
- 12 ice cream sandwiches (or 18 mini sandwiches)
- 1 medium size Oreos
- 1 large container Cool Whip
Used kitchen supplies
PRELIMINARY TIME: 10 minutes
TIME "BACK" 1-2 hours
Ice Cream Cake Tips
- Make sure the Cool Whip is thawed before mixing the frost. If Cool Whip is frozen, it will not mix well.
- Decorate your cake with crushed Oreo cookies or even whole Oreo cookies on top for a wow-worthy dessert!
- When you are ready to serve the cake, give it 10-15 minutes to thaw to make it easier to cut.
- To cut, we recommend using a long serrated knife and placing it under hot water for a few seconds.
- This recipe can be made gluten free and / or defatted by replacing the type of ice cream used with sandwiches and cookies. In this context, we use "dairy-free" to mean lactose-free. Some brands of topping herbs may contain ingredients derived from milk, so be sure to check the labels.
How to make 3 ingredients cookies and ice cream

STAGE 1: Chop the Oreos in a food processor until finely ground.
STEP 2: Add ground Oreos to a mixing bowl containing 2 cups of Cool Whip.
STEP 3: Fold the ground Oreos in Cool Whip until well combined - this is "frost".
STEP 4: Place a non-stick baking mat on a cookie tray and arrange four ice cream sandwiches together in the center of the dough. Spread a generous layer of frost on top.
STEP 5: Repeat with two more layers of ice cream sandwiches, then freeze the top and sides of the cake.
STEP 6: Leave the cake in the freezer for at least 1-2 hours. Remove from baking matCut and enjoy!
What size cool whip container do I need?
We used a large 16-ounce Cool Whip container. You probably won't use all of this, but a smaller container may not be enough.
And the way I see it, it's always better to have a little extra frost than not enough!
How long can I store ice cream cake in the freezer?
For the best taste and texture, we recommend that you enjoy your homemade ice cream cake within a week. Keep covered as tightly as possible to prevent the freezer or moisture from burning in the cake.
What is the best way to transport an ice cream cake?
For short distances, an ice cooler will work well to keep your cake frozen. If you have ice packs, they are even better because they will not melt and will fill your cooler with water.
